Yahiko Aikoku Junmai Ginjyo is produced from Yahiko-Zakura #5, a yeast cultured from the sole Yahiko-Zakura Cherry Blossom tree residing atop Mt. Yahiko, Yahiko Village (10 mi²) cultivated Aikoku rice (a formerly-extinct ascendant of the famed Yamada-Nishiki), resurrected from a mere 10g of preserved seeds, and the extraordinary subterranean water from the base of Mt. Yahiko.
