Yahiko Shuzo

Yahiko Shuzo was founded in 1838. In 1848, the founder established his own unique sake brewing method known as Izumi-ryu. Izumi-ryu, named after the izumi, or spring waters that have been safeguarded at the base of Mt. Yahiko, the famous mountain of Echigo. At the time, this method was groundbreaking, resulting in sake that was light in taste, pale in color, and of long-lasting quality. Yahiko Shuzo is located in Izumi at the base of this mountain, which has truly been granted the blessings of nature and the gods. Those blessings include the Ichinomiya Yahiko Shrine (AD 759), of which Yahiko Shuzo is the supplier of holy sake. No matter how the environment surrounding Japanese sake may change, we are not swayed by trends, and steadfastly safeguard the Izumi-ryu style with loving care.

越後の名峰、弥彦山麓で護られてきた「泉」のごとき酒造り『泉流醸造法』
眼下に日本海と新潟平野を一望する越後の名峰、弥彦山。その麓、越後一宮彌彦神社など、まさに自然と神の恩恵を授かった山麓「泉」の地に弥彦酒造はございます。天保九年(1838年)創業。嘉永元年に初代が独自の酒造法「泉流醸造法」を確立。「〜その色淡、その味頸、耐久廃せざる〜」を特徴とした当時画期的な醸造法とされておりました。以来、その醸造を修めるべく多くの蔵人が当蔵の門を叩きました。長年にわたり多くの蔵人を育て、師事した門人は数百人にも及びます。泉流の流儀を踏襲した多くの蔵人を杜氏として各地の蔵へ輩出したことから、『出世蔵』と称されておりました。越後一宮に仕える御神酒蔵として、当蔵は日本酒を取り巻く環境が変わろうとも、流行に左右されず、永きにわたり丹精込めて泉のごとき酒造りを頑に護り続けております。
