Shimazaki Shuzo
Location
Founded in 1849, the brewery brand Azuma Rikishi was created after the second generation’s favorite sport; sumo. Taking inspiration from the formidable term rikishi whose kanji symbolizes “gentleman of strength,” the brand’s ethos is to sufficiently draw out the umami inherent in rice to create a hearty brew. In 1970, a nearby 800 meter deep cave that was dug out intended to become a tank-building facility during WWII was declassified and procured by Shimazaki Shuzo for sake storage.
1849年創業、2代熊吉が無類の相撲好きであったことから酒銘を「東力士」と命名。以来「取り組みで負けぬ銘酒や東力士」をモットーにお米の旨みを十分に引き出したしっかりとした旨口酒を造り続ける。1970年から日本酒の長期熟成への取り組みを開始し、近年では自然の洞窟を熟成庫として活用し特異な貯蔵環境によるあらたな日本酒の味わいづくりへのチャレンジをすすめている。
