Ohara Shuzo

Established in the Kitakata Basin Region in 1717, Ohara Shuzo has been making sake for 300 years.  With an average annual cumulative snowfall of 15 feet, the snowmelt takes over 100 years to travel into the the aquifers of the basin region.  The variance in temperature between day in night is severe and therefore results in a consistently sturdy rice cultivation. 

Obsessed with hand-crafting sake, Ohara's focus is on the quality of rice, strict temperature control, painstaking polishing and hand-pressing. 

享保2年(1717)創業の小原酒造は、昔から高品質の清酒が造られてきた会津で、300年にわたりこだわりの日本酒を造っています。喜多方は周りが山に囲まれた盆地で、豪雪地帯です。飯富山の扇状地に積もる1~5mの積雪が百年かかって伏流水となり、酒の仕込み水に使用されます。昼と夜の寒暖の差が激しく、水はけのよい土壌でおいしいお米の産地で、酒造りには最高の環境が整っています。

昔からの伝統で高品質の清酒を造っています。 米、手造り、低温管理にこだわり、精米時間をかけた酒米を長期間低温にて仕込み、手作業で搾り上げます。外硬、内軟の蒸米はたまごの殻のような溶け方をしてほしいのです。そのような条件、環境をコントロールするのが杜氏たる者の役目であります。毎日、醪と語り合い、日を重ねた醪を搾っていく過程で、真ん中の芯の部分が無圧で自然にたれくる酒を造っています。
