Ginrei Gassan was established in 1972 as a cooperative between 3 sake breweries respectively located in Nishikawa, Asahi and Sabae.  Snowmelt from Mount Gassan, the tallest of the three Dewa mountains, filters down in a process that takes 300 to 400 years, emerging from a spring at the foot of the brewery. This water is classified within the top 100 water quality sources in Japan. The brewery is surrounded by forests of Japanese beech and rice paddies.
