Toshimori Shuzo is a pioneer in the revival of a formerly extinct strain of Omachi sake brewing rice known as Akaiwa Omachi. Sake Hitosuji Junmai Dai-Ginjyo is made from limited production Omachi rice that is polished down to 40%.
